Day Six Recap: No-Sugar Low-Carb Diet

I’m super excited to share with you this Phase 1 South Beach Diet, No Sugar Diet approved recipe for Zucchini Garlic Pizza Bites that I invented! I got the idea from a Phase 1 South Beach Diet blog and made a few revisions to make them my own.

  • Zucchini
  • Turkey Pepperoni
  • Minced Garlic
  • Olive Oil
  • Parmesan Cheese
  • Low Fat Italian Cheese Blend
  • Oregano
  • Basil
  • Mushrooms
  1. Cut Zucchini into slices and arrange on a baking sheet.
  2. Brush olive oil on to the tops of the slices.
  3. Bake for 8 minutes at 450 degrees.
  4. Remove from oven.
  5. Add minced garlic as the “sauce” of the pizza.
  6. Sprinkle on basil and oregano, then parmesan cheese.
  7. Add Low Fat Italian Cheese.
  8. Add sliced mushrooms and turkey sausage.
  9. Bake another 10-15 minutes at 450 degrees.

Day Four Recap: No-Sugar Low-Carb Diet

On Day Four I decided to get a bit creative with my fish preparation. So for lunch, I attempted a broiled Parmesan-crusted tilapia, which despite taking almost my entire lunch hour to prepare, turned out pretty good. To make it, I just sautéed my usual vegetables (onions, green onions, kale, mushrooms, red peppers) in olive oil, and then cooked the fish for about 4 minutes on both sides. Then I used a butter knife to spread a little lite mayo on both sides of the filet and sprinkled on the Parmesan cheese. You just broil it until the Parmesan is brown on top. It’s pretty delicious!

Day Three Recap: No-Sugar Low-Carb Diet

Thursday was an important day for me because I was scheduled to take my Series 63 Variable Licensing Exam. For those who don’t know, it’s a test you have to pass in order to perform certain functions in the finance industry. I was hoping that the no-sugar diet wouldn’t have me too distracted to pass my test. I had previously failed my guarantee exam the day before, so I was a little stressed, but I woke up early and studied before the test.

And I passed!!!! 🙂 🙂 🙂 🙂

Yay! So the sugar withdrawals couldn’t have hurt my cognitive function too much!

Day Two Recap: No-Sugar Low-Carb Diet

Breakfast: plain nonfat Greek yogurt and black coffee

Lunch: leftover Cauliflower and Ham Au Gratin Casserole (recipe here!)

Snack: Jalapeno peppers stuffed with cream cheese and pimento olives and cashews

Dinner: scrambled Egg Beaters and onions, peppers, mushrooms and reduced fat Mexican blend cheese
